The Flavor of Andalucia, Sevilla, Spain
Sevilla, Spain has it all from great, cheap tapas, beer and wine to grand architecture and a very vibrant welcoming city. If you look closely you will see Plaza Espana, a backdrop in the recent Star Wras Clone flick.
The Medieval Town of Girona
Girona is famous as the birthplace of the Jewish Kabbalah mystic tradition. The medieval town is well preserved as has all the good tastes you would expect from a Catalan town.
The Old Fortress of Toledo
Toledo, a great daytrip from Madrid, is a well-preserved medieval town on hill surrounded by a natural moat/river. It was one of the most famous steel and sword-making towns in medieval Europe. There is a magnificent cathedral and one of the most famous fortresses called the Alcazar. The famous painter El Greco was born here too.

An interesting half-day trip from Sevilla is Italica, where there are the ruins of an ancient Roman town/ampitheater.

Three Kings Day is a big festival in Madrid, a few days after New Years, mainly for kids, but everybody has fun.
Where All Sherry Is Made
I ended up Jerez de la Fronterra about an hour from Cadiz because Cadiz was booked due to Carnival. Pleasant surprise...Jerez and the people are very nice. All real sherry (jerez) gets made here!!! A dry sherry is good with tapas!
